The production of a superior olive oil depends, above all, on respecting the tree, the olive and the soil where it is rooted. The respect for the olive fruit is essential during the development and growth phases as well as during the harvesting and the period of storing in containers before crushing. The company
The azienda agricola Costantino Romanelli is a small, family-run business with 3 generations still actively running the mill. It is set at an altitude of almost 473 meters s.l.m, in the charming city of Montefalco, well known for its wines and olive oil.
The Oil
The extra virgin olive oil sets its root in the “Romanelli” olive groves where it is organically grown, in order to grant the plant a balanced and stable growth without the negative effects caused by the use of chemicals. From the hand picked olives, completely intact, just beginning to ripen, and from a daily “a freddo” (cold) crushing at temperatures not surpassing 27°C (in order to avoid early oxidation during the production phase), a superb olive oil is obtained with a very low degree of acidity and peroxides, and a very high content of antioxidant. This imparts a rich and delicate flavour to the olive oil and ensures a long duration in time.
