In the heart of Umbria, the old tradition of the “porchetta” (roasted pork) of Bevagna has been carried on by Cariani Porchetta Umbra di Bevagna. The traditional “porchetta” is made by cooking the whole pig with head attached, deboned, flavoured and trussed up with a string. It is best enjoyed cold accompanied by a glass of good red wine. The Cariani lab produces “porchette” for wholesale only. The total production is in compliance with the European Community regulations. The pork meat is processed following a specific method of production, in order to bring out the unique characteristics of the old fashioned “porchetta” of Bevagna.
